1998 Cabernet Sauvignon
Cabernet Sauvignon 1998 - This Cabernet is made from 100% Cab Sauvignon and was the very last grapes from the old "Sorensen" place on the corner of the Trail and Deer Park Road up here near St. Helena. The "upper" vineyard was planted on AXR1 rootstock and was badly infested with phylloxera and other diseases and was ripped out right after the "guys" and I hand picked the few available berries for a total of 75 gallons. Thanks to Lisa Van Der Water at the Wine Lab, I was able to create this Cab Sauvignon, which, hopefully, you will get to taste yourself. Barrel aged for almost two years in American oak. Completed malolatic fermentation and has 14.2% alcohol, a pH of 3.38 and % Residual Sugar. Has fruity aromas and fares well with a variety of cheeses and meats.
2000 Sauvignon Blanc
Sauvignon blanc 2000 - 100% Sauvignon blanc with no barrel aging. Residual Sugar is 0% and the alcohol is 12.8% and pH of 3.13. The vineyard is located on Glass Mountain Road just below the Saint Helena Hospital and has been replanted due to Pierces' disease which has claimed most of the original 1981 vines. The grapes are on drip irrigation and the "terroir," the soil is full of rocks, including volcanic obsidian - origin for the Glass Mountain region. The Sauvignon blanc is quite refreshing on the palette during the warm weather and has pretty good fruit. Glass Mountain Cellars' Sauvignon blanc is made from grapes grown in the Glass Mountain Vineyards of Glass Mountain Rd., St. Helena, in annual batches of only 30 gallons. Production began in 1984. The Sauvignon blanc is fermented dry but retaining good fruit and has not seen an oak barrel. This wine was bottled on April 18, 2001.
